This delicious tamales are Andean inspired using cilantro, tomatillo, cumin, garlic and onion. The chicken is cooked in a pressure cooker and the broth goes to the masa in lieu of lard. They are a good size portion and weigh 8 ounces or more. I find I can eat one, while my husband opts for two.

 

It tastes even better topped with my famous Claudia's Salsa and sour cream.
