Coconut Kisses for Tropical Lovers

Inspired by our famous Mexican Wedding Cookies, we created Coconut Kisses as a l'aignappe at our re-known Coconut Inn.


What a treat it is to be kissed by a coconut. GK

The Coconut Inn is an imaginary place created by me, Claudia. It is a place where there's always a seat at our table, no matter the number of guests.

Coconut Kisses

Ingredients

  • 1 cup butter, softened

  • 1/2 cup powdered sugar

  • 1 tsp. coconut flavoring

  • 2 cups flour

  • 1 cup of unsweetened grated coconut, divided

  • 1 cup finely chopped pecans

Directions

  1. Heat oven to 350°F.

  2. Beat butter, 1/2 cup sugar and coconut flavoring in large bowl with mixer until light and fluffy. Gradually add flour, beating on low speed after each addition until well blended. Add nuts and coconut flakes; mix well.

  3. Shape dough into 48 (1-inch) balls. Place, 1-1/2 inches apart, on baking sheets.

  4. Bake 14 to 15 min. or until bottoms are lightly browned. Cool 5 min. on baking sheets. Roll warm cookies, 1 at a time, in remaining coconut flakes in small bowl until evenly coated; place on wire racks. Cool completely.

Note: Are you a chocolate lover? Add 1/4 cup of unsweetened organic cacao to the mixture.

Do you like anise seed? Add 1/2 teaspoon and omit the coconut flavoring.
