Salt, Fat, Acid, Heat- Mastering the Elements of Good Cooking
June 14, 2019
This hands-on cooking class will focus on Samin Nostrat’s four cardinals of cooking. We will prepare one recipe from each of her elements that will empower you to feel comfortable cooking without using a recipe. When do you salt your chicken? How much salt do you use when cooking pasta? How can you amplify a flavor in a dish by adding fats like butter, olive oil, or coconut milk? Why us cranberry sauce used in your typical Thanksgiving menu, and finally how to use heat as the ultimate means of creating texture in the food you prepare.
Be ready to explore and move from your comfort level as we travel to the world of the senses and the elements.
“Each spice has a special day to it. For turmeric it is Sunday, when light drips fat and butter-colored into the bins to be soaked up glowing, when you pray to the nine planets for love and luck.”
